Film Camera ISO setting?

I have a Canon AE-1, and there is a dial on the camera to change the ISO for the film in use. My question is, What is actually changing with the camera when you change the ISO setting? Why do i change the setting?
I know ISO is film speed, but what is happening to the camera when i change the setting?

It changes how much light it takes for the light meter to show correct exposure.How much light it takes for it to react basically If the camera has shutter or aperature priority modes remember the meter will set those settings after you set the one that is priority , As I remember the AE1 was aperature priority if you set it to the A on the lens. So you set the shutter speed and the meter will tell the camera what aperature to set based on reflected light that reaches it. It does not change how the shutter or aperature operates on a manual camera so you can shoot with the sunny 16 rule on a manual SLR and never set the ISO if you choose to
